Here’s how we prepare it

Ingredients

What you'll need
1/4 cup extra virgin olive oil
3 tbsp balsamic vinegar
2 tsp maple syrup or honey
1/4 tsp garlic powder
Juice 1/2 lemon
2 tbsp Biotiful Meal Booster Berry Blend
Salt and pepper, to taste
250g kale, large stalks removed and shredded into smaller pieces
Large handful roasted pecans or walnuts
100g feta, chopped
100g cooked quinoa
100g pomegranate arils, plus 3 tbsp more for sprinkling

Method

How to make
In a jam jar, add all dressing ingredients. Shake until well combined, then season to taste. Set aside.

Add the kale to a bowl, then pour over the majority of the dressing. Massage into the kale, then add the nuts, feta, quinoa and pomegranate.

Toss to combine. Add more dressing, if desired, and more pomegranate seeds!
