The Ultimate Cheesy Potato Savoury Protein Pancakes

Not only do you get a great morning hit of protein, but are such a delicious meal! Topped with fried eggs, avocados and Biotiful Protein Kefir, this is always a crowd pleaser.

What you need
450g mash
3 tbsp melted butter, cooled
2 eggs
One large bunch spring onions, finely chopped
1/2-1 tsp garlic powder
1/2-1 tsp onion powder
2 tbsp Nutritional Yeast
100g cheddar, grated
1 cup spelt flour
1 tsp baking powder
2 tbsp milk (if needed)
Salt and pepper, to taste
To serve:
4 fried eggs
2 avocados, sliced
2 pots Biotiful Protein Original 250g

Method
How to make
Stir together the mash and melted butter to combine. Crack in the eggs, then add in the spring onions, garlic powder, onion powder, Nutritional Yeast and cheddar and stir to combine. Fold in the flour and baking powder, then season well to taste. Add a splash of milk if needed.
Heat oil or butter in a pan, then cook dollops of mixture for at least a few minutes, or until golden. Flip and cook on remaining side until golden and cooked through.
Repeat with remaining mixture. Serve topped with a fried egg, slices of avocado and dollops of Biotiful Protein Kefir Yoghurt.
