Roasted Tomatoes with Whipped Feta & Biotiful Kefir

What You Need
200g feta
100g Biotiful Kefir Yogurt
Finely grated zest 1 lemon
FOR THE TOMATOES
200g cherry tomatoes
halved 1 garlic clove sliced
1tbsp extra virgin olive oil
1tbsp balsamic vinegar
Handful basil roughly torn
TO SERVE
Pita bread
100g Biotiful Kefir Yogurt
Finely grated zest 1 lemon
FOR THE TOMATOES
200g cherry tomatoes
halved 1 garlic clove sliced
1tbsp extra virgin olive oil
1tbsp balsamic vinegar

Method
How To Make
1. In a blender or food processor, whizz the feta with the yoghurt and lemon zest until smooth.
2. Heat the oven to 180C fan. Add the tomatoes, basil, garlic and olive oil to a small roasting tray. Roast for 10-15mins, until softened and slightly caramelised. Add the basil.
3. Toast the pita and slice into bite size pieces.
4.Spread the whipped feta on a serving plate, top with the tomatoes and serve with the toasted pita.
