Here’s how we prepare it
A fresh, healthy and delicious dish for all the family at dinner time, this coconut adn turmeric curry with a dipping sauce made from our Coconut Blend is the perfect way to support your gut health as well as you taste buds!
Ingredients
For the Curry
- 2 tablespoons oil (coconut or vegetable oil)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inches piece of ginger, grated
- 1-2 green chilies, finely chopped (adjust to your spice perfernce)
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- 1 can (14 0z) coconut milk
- 2 cups mixed vegetables (like bell peppers, carrots, peas, ad broccoli)
- Salt to taste
- Fresh coriander for garnish

Method
Prepare the Curry
- Step 1: Heat oil in a pan over medium heat. Add chopped onions and saute until translucent.
- Step 2: Add minced garlic, grated ginger, and green chilies. Cook for another minute until fragrant.
- Step 3: Stir in the ground turmeric, coriander, cumin, and garam masala. Cook for a minute to toast the spices.
- Step 4: Pour in the coconut milk, stir well, and let it simmer for 5 minutes.
- Step 5: Add your choice of mixed vegetables to the simmering curry sauce.
- Step 6: Cook until the vegetables are tender but still crisp.
- Step 7: Season with salt to taste and adjust the spices if needed.
- Step 8: Simmer for an additional 5 minutes.
